We have had a fairly relaxing day today. We harvested this morning then went about weeding and burning again. We also have a line on a new member to our homestead! We will let you know when we add to our rapidly growing family. Here is a photo of our harvest today! We chose to cube and freeze these. Tomorrow though we hope to attempt Zucchini bread.
We blanch these by boiling them for three minutes then rapidly cooling them in ice water. We then put them into freezer bags and using a straw remove the excess air. Then into our deep freeze they go. We also plan to can a batch soon. I am considering breading some and freezing for frying later. Y’all have any recommendations on recipes to utilize this abundance of yellow squash?
